Matcha is a finely ground powder of specially grown and processed green tea leaves. It is distinct from other green teas because the tea leaves are shade-grown for several weeks before harvest, which increases chlorophyll production and gives the leaves a vibrant green color and a unique amino acid profile. After harvesting, the leaves are destemmed and deveined, then stone-ground into a fine powder. This process means that when you drink matcha, you are consuming the entire tea leaf, rather than just an infusion, which results in a higher concentration of antioxidants, vitamins, and minerals.

Combining the Japanese words matsu, “to rub, to daub, to paint” and cha, “tea,” matcha is grown according to strict rules. Matcha must be taken from shade-grown tea plants, which have heightened levels of chlorophyll and have a bright green colour. Only the buds and top three layers of the young tea plant, Camellia sinensis, are harvested. The tea leaves are steamed to halt the oxidation process, then deveined and ground in stone mills. Because of such laborious and exacting production standards, matcha is among the most expensive kinds of teas on the market.

Matcha is rich in antioxidants, particularly catechins like EGCG, which may help protect against cell damage and chronic diseases. It also contains L-theanine, an amino acid that promotes a calm alertness, improves focus, and reduces stress. Additionally, matcha can boost metabolism, support detoxification, and provide a sustained energy lift without the jitters often associated with coffee.

The primary difference lies in their quality, flavor profile, and intended use. Ceremonial grade matcha is the highest quality, made from the youngest, most tender tea leaves. It has a vibrant green color, a smooth, delicate, and naturally sweet flavor, and is typically consumed on its own, whisked with hot water, for traditional tea ceremonies. Culinary grade matcha is made from slightly older leaves and has a more robust, slightly bitter flavor. It's designed to be mixed into recipes like lattes, smoothies, baked goods, and other culinary creations where its strong flavor can stand up to other ingredients.

To maintain freshness and prevent degradation, store your matcha in an airtight container, away from light, heat, and moisture. Refrigeration is recommended once opened, but ensure it's tightly sealed to prevent it from absorbing odors. For unopened matcha, a cool, dark pantry is suitable. Proper storage helps preserve its vibrant color, delicate flavor, and beneficial nutrients.
